In 1996, the U.S. Department of Agriculture (USDA) revamped its meat inspection system to ensure a high standard of safety.

In the meat and poultry industry, the Food Safety and Inspection Service (FSIS) has on-site inspectors at every establishment to make sure only healthy animals are allowed into the food chain and that the products are safe for consumers. For all other food groups, the Food and Drug Administration inspects all facilities.

Probably someone who inspects if theres mold somewhere, to see if it's dangerous or can be easily removed, eh, they dont teach this stuff in school
