Basically, scientists have combined genes from other species, such as bacteria, and corn genes. I believe the purpose was to make the corn more resistant to insects, but it could have been to make the corn more receptive to the use of Round-up. Scientists have also done similar genetic engineering to other crops.

Selection of desirable traits in cattle by humans is the most common and best-used way to "genetically change" cattle by breeding those cattle with the desirable traits with other cattle that have the same traits, and continuing this selection until they have gotten what they wanted to achieve. The prime example of this extreme artificial selection is the Holstein-Friesian dairy cow. She has been bred and selected over time to be far more dependent on humans than her ancestors were in the past, to give way more milk than her ancestors, and to have less of a mothering ability than other cows that are raised in a rougher environment where they have minimal human interaction and intervention. She also has become more dependent on higher quality forages that her ancestors were and cannot "do as well" on poor roughage like those few tough ol' range cows that still exist today.

Through the process of selection we can also get mutations, which may start a new breed or be the downfall of a particular breed or the cattle themselves. Because for every desirable trait that is selected, the chance is just as great that we are unconciously selecting for undesirable ones. Just like I showed in my example of the genetically-altered milking machine called the Holstein dairy cow.
