Most tea is grown and harvested in India and China. Herbal tea, made from various herbs, spice, roots and other plants and parts of plants does not come from the actual tea plant and is grown all over the world. Rooibos (red bush) tea, which is a separate plant from tea, comes from South Africa.
China grows the most tea. The harvest of tea is rather interesting and how it is prepared for market . Tea plants grow as a bush and when it is harvested only the top leaves are cut, so a plant can be hundreds of years old. After the leaves are cut they are dried and they are non fermented or unfermented teas. The traditional method of processing tea involves heating,rolling, and drying. After picking the leaves are spread out on bamboo trays and exposed to sunlight or warm air for one or two hours. Finally the leaves are rolled into various shapes and then dried. China guards it's tea production and only sells its teas to licensed buyers. Storing loose leaf tea is also very important and keep fresh putting it in a ceramic jar is the best method. If tea is stored with coffee it will pick up the taste of the coffee so it must be kept apart. Tea bags are the leftovers from tea production and are not high quality teas, so for a good quality cup of tea loose leaf teas are best used. The price of good loose leaf teas has gone up in recent years. Four ounces of quality black tea runs about 20.00 today.
