Being from the Caribbean myself and Studying in Canada I would have to say that we use alot more spices when we cook and what is hot to the average North American is a tingle in my mouth

I can share where to find some good Caribbean recipes. Some of my favorites are jerk chicken and conch fritters. Jerk Chicken is usually quite easy to make, but is a little spicy. The food network website has a host of Caribbean recipes. That's where I find a lot of recipes I use at home.
