The short answer is "Yes," Christianity is monotheistic, meaning that Christians believe in the existence of one god, and worship only one as God. This would separate them from polytheists who believe in the existence of, and worship, more than one god, as well as henotheists, who believe in the existence of more than one god, even if they only worship one god.
It is, however, worth noting a subtlety of traditional Christian theology. Classic orthodox Christian teaching is in the Trinity. One might call it Trinitarian Monotheism. The belief is in one God who exists eternally in three persons... these being God the Father, God the Son, and God the Holy Spirit. Thus God exists in both a unique solitary sense and in a social sense. A Unitarian (or Modalistic Trinitarian) Monotheism denies the "threeness of God."
It is certainly understandable why some would see Trinitarian thought as polytheism, rather than monotheism. However, it is (frankly) only fair to honor the understanding as it is presented (whether one actually accepts it or not). To accept a social entity within a unity does not describe a being that is self-contradictory... but rather a being that exists in a way that is not human. Since Christians (as many other groups) believe that God created man in His image, not that Man created god in His image, paradox (truth that is outside of human analog) can be anticipated.
Yes, Christians believe in one triune god.
