Whatever you like. We go out to a particular restaurant, and the menu varies.. they've had prime rib, rack of lamb, bison steaks, etc. on different years. Turkey is kinda traditional for Christmas as it is for Thanksgiving, but not so absolute. I know a lot of people also who like to serve spiral ham.
What me and my family does is Turkey ham and such its not all that fancy though.

in the past only the wealthy would have been able to afford these dishes at Christmas and regular folk would most likely have just had a better cut of meat. turkey became popular in the 1970's onwards as mass farming greatly reduced the price. goose is often considered now as the traditional dish and is now one of the most popluar dishes available for the middle classes. duck has often been used as a traditional meal to a larger cross section of the popluation near the cost or natural water reserves
