Well they look the same but I left it out overnight. The eggrolls and salmon were cooked yesterday. I'm not sure if I was suppose to put them in the fridge.

Yes, it's safe to freeze cooked sausage and peppers.
If that 'thing' was a bowl of just potato chips or pretzels - sure it would be safe. But a bowl of chili or soup, a chicken leg, or pizza or anything else that requires refrigeration would not be safe left out overnight. The inside of microwave oven would not afford any special protection against microorganisms.
Chicken is never okay outside of the fridge or freezer. If it's left out more than 20 or 30 minutes, I would throw it out.
