Yes you can. Whip up some egg whites until they are fluffy and airy but not stiff like what you would need for meringues. Coat the ice cream in the egg whites, roll in desiccated coconut then deep fry for a few seconds. You need to be very careful you get the mix of the egg whites correct and don't over cook the item as liquid and hot cooking fat do not mix!

Fried ice cream tastes great! Just imagine ice cream except you also have a nice, sweet, and crispy exterior also. It can get a bit melty if you don't quickly eat it though.
