Not bad really, but it has no real food value and some people can have difficulty digesting it.
Yes there is significant scientific evidence to support health claims for eating cartilage. Increased libido, recovery time and volume are some that have been recognized.
Cartilage by composition has contains race amounts of collagen and elastin. Cartilage is often eaten in soups in Asian culture and is thought to support healthy skin, bone and hair health.
Cartilage is very tough and has no nutritional value. It isnt bad for you per se. You need to cook meat with lots of cartilage in it slowly for a long time to melt it then it's digestable.

Cartilage
Feathers, skin, muscle, bone, and cartilage. Essentially, a chicken is made out of carbon, nitrogen, and oxygen.
Not real nutritious or digestible. If you enjoy the crunch and it does not bother your teeth. There is nothing in cartilage that will harm you.

Ever hear the frase "You are what you eat"? Eating beef or chicken cartilage is actually good for you. It helps to repair/replace damaged cartilage in your body. People who suffer from arthritis may also experience relief of some arthritic symptoms. You can buy cartilage in pill/capsule form at your local health food store.
"Chicken cartilage contains Type 2 collagen which is necessary for rebuilding bones and your own body's cartilage. It also may help with arthritis and other types of joint pain." I don't think that there has been any research to prove or even hint at what the above poster states. Although it is true that cartilage contains type II collagen and it is needed to repair your own bodies cartilage, it is a HUGE leap to assume that the digested cartilage will then be broken down into type II collagen and the transported to your joints for rebuilding. With that said- I have not been able to find specific information regarding the nutritional value of chicken cartilage.
