Yes, historically. But we are in the midst of a change, where restaurants have come under pressure to significantly reduce the amount of trans-fats in their fries. Wendy's last year claimed to remove almost all of it, and McDonalds removed more than half. Burger King is apparently still working on it.

Gluten is a composite protein derived from wheat. It is not normally added to french fries. Gluten is only hazardous to people with Celiac Disease, which affects 0.5 to 1% of the US population.

Transfats come from the oil the fries are cooked in. If the cooking fat has transfats then the potatoes will, too.
