Either is correct, but you would want to use the first in reference to a single holiday. "Have nice holidays" could be used when there are two holidays close together, like Christmas and New Years.

Christmas is a very good holiday because it is a time of joy and that is also the perfect time to be spending time with your famiy. Everyone enjoys a nice warm hot cocoa during the holidays.
I wouldn't suggest for you to do anything too straining whilst on holiday, as you go on holiday to relax, but do what you do on holiday and go for a nice long walk/jog/run, and if you go somewhere surrounded by mountains, why not go rock climbing?
