Depends. If you've a bone - say, a lamb shank, pork chop or chicken leg - there's no really polite way to eat it with knife and fork; you just pick it up and gnaw. On the other hand, I'm sure you wouldn't consider fishing bits of meat out of a soup or sauce with your fingers. Suit the etiquette to the occasion and the type of food.
