A 1200 lb steer will yield about a 750-800 lb carcass, plus about 15 - 25 lbs of organ meats (tongue, sweet breads, tripe, kidney, liver, heart, and brain (watch out for encephalitis)). Roughly 15% of the animal's weight is bone or about 200 lbs, and from the carcass, about 75% is edible muscle tissue.
A 3 lb Chicken will yield about 1 1/4 lbs of edible meat, and about 15% of the animals body weight is bone. The rest is skin, entrails, and feathers.
