Prep cooks, line chefs, and janitorial staff make up a large part of the kitchen, while servers, hosts, and floor managers make up most of the front line staff. Higher level positions include executive chefs, restaurant managers, and sommeliers. Jobs are generally very fast paced, but allow employees to pursue their passion for food and cooking. The most thought of jobs in the restaurant industry are cooks. There are several levels of cooks in the industry. Starting positions usually involve preparing food for cooking by chopping, dicing, blanching, or otherwise turning raw ingredients into a usable form. Basic cooks and line cooks take these ingredients and prepare them to the chef's specifications. Sous chefs are trusted and proven cooks that report directly to the executive chef, but that still work with the other cooks. Waiters, servers, greeters, and floor managers are all non-cooking positions. Instead, these employees interact with customers, serve food, answer questions, and foster the overall good experience that is desired. Managers and executive chefs work above the wait staff and handle most of the business aspects of the restaurant such as the cost of a dish, the menu, the dcor, and human resources. Specialty workers such as sommeliers, bartenders, and even musicians can also be employed by larger establishments. Most employees in a restaurant spend nearly all day on their feet moving and lifting food, so physical fitness is important. A degree from a culinary school can be very advantageous, but is not necessary for normal work as a line cook or prep chef. When entering into higher levels of employment, such as a restaurant manager, business degrees and certifications from restaurant associations might be necessary. For the most part, however, an individual can start at the bottom of the restaurant industry and slowly work their way up without many previous qualifications. Starting salaries for most positions in a restaurant are very low. Wait staff who rely on tips might actually have below minimum wage salaries that are supplemented through customer tips. Over time, salaries tend to even out, although positions like prep chef remain very low even after several years. More prestigious positions like mangers and sous chefs can have salaries that are above average. The highest paying jobs in the restaurant industry are those of restaurant owners and well known executive chefs.
