And, Jewish tradition does not say that non Jews are automatically condemned to Hell, so there is no need to convert people in order to save their souls. Jewish tradition holds that "all the righteous of the world have a place in the world to come." Therefore, the only obligation Jews have, from the point of view of saving souls, is to urge people to live righteous lives.

For a religion that has no strong missionary bent and a tradition of warning Jews about the risks of conversion, the number of converts to Judaism these days is surprisingly large.

No, Judaism has allowed conversion from the start. Tzipporah, the wife of Moses, was the daughter of a Midianite priest. Ruth, an ancestor of King David, was a Moabite convert. Jews do not seek converts, but they welcome converts. Conversion to Judaism requires a long course of study and approval by a beit din, a rabbinic court composed of 3 judges. Jews don not consider conversion to be required for a person to be accepted by God, and they recognize that conversion is both hard and exposes converts to attack by antisemites.
