They would eat them but that doesn't make olives good for them. Black olives have a high fat and salt content which is why animals like them so much but the last thing you want to feed your hamster is high fat/salt foods. Fresh veggies (there are exceptions on which ones), pelleted hamster food and timothy hay are pretty much all you should be feeding them according to my exotic vet. Never feed dwarf hamsters fruit or carrots as they are high in sugars and dwarf hamsters tend toward Diabetes.
According to my exotic vet that I use it's okay to give them small amounts of romaine lettuce occasionally but NEVER give them iceberg lettuce as it's got way more water in it and can cause diarrhea which can be a real issue for such a small animal. I give mine one small piece of romaine lettuce just once a week and give broccoli, cauliflower, green or red bell pepper and yellow squash the rest of the time (not all of it every day, just small amounts rotated.).
