I'm unaware of ANY cheese being harmful. In moderation all cheese is good.
It is not made with "moldy cheese" it is made with a type of blue mold added to it during its manufacturing but, this mold is not harmful to humans. Blue cheese is part of the blue veined cheese group.

This will depend on what kind of cheese. Cheddar cheese will contain more protein than velveeta or American cheese. Cottage cheese probably contains the most protein.

Processed cheese such as sliced cheese, that packaged melting cheese, and the parmesian cheese you get in a green shake can, those contain TONS of salt, like all processed foods. Generally, cheeses native to warm climates tend to have more salt in them because its used as a preservative, and hard cheeses generally have more salt in them than soft cheeses. Cheddar cheese has more salt than swiss, for example.

Logically, yes, more cheese means less cheese. However, such is a contradiction and therefore impossible (unless the system is in a dynamic relationship, which in the real world is entirely possible).
