PICKLED BOLOGNA

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 c White vinegar

1/2 c Water

1/4 c White sugar

1/8 ts Salt

1 tb Mixed pickling spices

1 MD Onion, sliced

1 Ring bologna, cut into

-2-3 inch pieces

Mix together first 5 ingredients and boil for 8

minutes; cool. Put bologna and onions in large glass

jar. Pour vinegar mixture over bologna. Refrigerate

overnight before serving. Store in refrigerator.

You must start with cooked tripe. It takes 12 hours to cook (boil) or you can buy it already cooked. You can simply pickle it with a regular pickling recipe, but the quick way to do it is to make a marinade with half broth (from cooking it) and half vinegar and soak it for several hours. Since, for some unknown reason they stopped pickling tripe commercially I would like to do it myself at home.
