Physical... Chemically it's still cheese - but the shredding changes its appearance.

So if you shred the cheese, sure you are breaking the cheese up into tiny pieces, but it is still cheese.But the making of cheese, is a chemical change. because you actually took different objects and changed them so that they were no longer the same object, but a completely new substance.
