Manual steering doesn't have the pump, so the effect to turn the steering wheel is high, especially at low speeds. Manual steering racks have a higher gear ratio to make it easier but an example is to turn your steering wheel with the engine off. You can get an idea of how much the pump helps.
You can do it. I did it on my 1996 Saturn, but I did it while I was changing the engine. The new engine came with a power steering pump, so I also purchased a new power steering rack as well, and while I had the engine out I removed the old manual steering rack and put in the new one, connected the hoses, and voila, I had power steering. first thing is you need to pull off the belts, and yes all of then because the stering belt in behind the others. then there is two bolts holding the pump so remove them and then just remove the high and low pressure lines and your done.
