This depends on what froze your iPod up. You may be able to just hold in the power button at the top for about fifteen seconds, and it will turn off, when you turn it back on, it shouldn't have any problems. If this doesn't work you can try restoring it, through iTunes.If all else fails, and you still have a warranty you may contact apple, and try to send it in so they can fix the problem.
To unfreeze your Ipod hold the menu and select button at the same time until the apple sign shows then let go and it will unfreeze.
To reset iPod touch, press and hold the Sleep/Wake button and the Home button at the same time until you see the Apple logo show up on the screen:
press down the center button and the menu button for 15 seconds and it migh tgo off before and it show the apple sign
Just hold down the Center and Menu buttons for a good 20 seconds or until the Apple Logo appears.

This is not a legit response but if your ipod is jail broken and its frozen and it will not unfreeze you can try resetting it a couple times. If that doesn't work I would recommend you calling the Apple company and see if they can help you.

There is not a way to adjust the sensitivity on the screen of your IPod Touch. If you think it may be broken you can send it back to Apple to have them fix it though.
