Walnuts
2 cups walnuts (halves or pieces)
2 Tbsp melted butter
2 tsp soy sauce
1/2 tsp ground ginger
1/2 tsp salt
1/4 tsp garlic powder
Preheat oven to 250 degrees F. Combine ingredients in a 9 x 13 inch baking pan. Bake till crisp (40 min?). They will keep well in a closed container.
Cashews
1 cup raw, unsalted cashews (whole or pieces; the pieces are cheaper)
1/2 tsp turmeric
1/4 tsp ground cumin
1/4 tsp ground coriander
1/4 tsp whole fennel seeds
1 Tbsp toasted sesame oil
2 Tbsp soy sauce
1/2 cup golden raisins
Mix the dried spices (turmeric, cumin, coriander, fennel seeds) together in a little bowl or on a saucer. This will make it more convenient when you have to add them to the skillet quickly.
Heat cashews in a dry skillet (no oil) over medium-high heat. Stir until lightly browned, about 2 minutes. They may brown in a way that gives them a few brown spots on each nut, which is OK. It's hard to brown them evenly.
Turn heat to medium-low; give it a chance to cool down for a few secs and then add toasted sesame oil to pan. Immediately add the dried spices and toss for 30 seconds. Add soy sauce and stir to coat nuts. Remove from heat and stir in raisins. Cool before serving. You can eat this as a snack or sprinkle it on rice.
