You can, only if something specifically says you can. Tribute for most Ritual Spell Cards can come from hand. But if the card doesn't specify, the tribute must come from your side of the field.
Monster Recovery reads; "Unite 1 of your own monsters on your side of the field and your hand with your Deck and then shuffle it. Draw the same number of cards that were in your hand from the Deck. (You cannot activate this card if you have your opponent's card in your hand.)" So, you choose one of your monsters on the field. Then you shuffle that monster, and all the cards in your hand, into your deck. Then you draw as many cards as you had in your hand previously, so if you shuffled three cards in, then you draw 3 card (note the monster you shuffled in does not count towards this). If somehow you have an opponent's card in hand, through Amazoness Chain Master or Exchange, then Monster Recovery cannot be activated.
This trick works with all Yugioh cards. If you look in the lower right-hand corner, there should be a shiny sticker. If there isn't one, the card is a fake.

You only have to show it to the opponent if it's been selected by specific criteria. For example if you are instructed to shuffle a Warrior-type card back into the deck, you must prove it is a Warrior-type. If there's no criteria, it's just 'a card', then no, you do not have to reveal it first.

Sounds like Ordeal of a Traveler. The effect is applied when the opponent attacks (does not have to be against a defence mode monster, or even a monster at all). He must select a card from your hand and correctly guess if it is a monster, spell or trap, or his attacking monster is returned to hand.
