The zest of this unusual ingredient has strong lemony flavors with floral and/or gingery undertones. In many recipes, especially scones, tea cookies, and other sweet pastry, the combination of fresh and/or candied citrus peel/zest and ground Cardamom will yield a very similar flavor palate to to genuine article.
