Auxiliary inputs to a receiver are always stereo. If you have a 5-channel analog signal (from a computer or other multi-channel device), you will need a receiver with a 5.1 analog input. This has 5 separate RCA inputs for left, right, center, sub, and the two surround speakers.
An analog output from a VHS-Hi Fi VCR can be input into the stereo aux inputs of a receiver and decoded to Dolby Surround, but this format is actually only 3 discrete channels, left, right, and surround. It has no separate information for the sub or the center channel, and has a limited bandwidth on the surround channel.

Reading discs is a problem with the DVD player, not the inputs. You can use an external DVD player and play the audio through the system, but it will only be in stereo. The Coby 937 only uses the surround decoder with its own DVD player.
What you can do is put as much audio as you can at once, then save it. After you save it, open up movie maker and import that video you made. The previous audio you put on will now be put on the 'audio from video' section. Then, add more audio the same way.

I don't know of any way to "echo" your voice on Windows Movie Maker. At least, there isn't a feature in the program that can do that anyway. The only thing I can suggest is to add an echo to your voice using an external voice/audio editor. Then import the audio into Windows Movie Maker.

The way to remove the video from the audio (and only retain the audio) is by dragging the video clip to the MUSIC/AUDIO track in the Time-line view of Windows Movie Maker instead of the Video track.
