I have heard that over-filling an engine with oil can be bad for a couple of reasons.
1) Too much pressure.
2) The oil can froth up, and the air bubbles trap heat instead of dissipating it.
The best thing to do if you've put too much oil in an engine is to drain it back down to the level it's supposed to be.
