It can be derived from wheat but also from other ingredients such as corn, cotton or wood pulp. If you are gluten sensitive or a celiac you may need to avoid cellulose if you have a reaction. It can be in medicine, vitamins and it is even used as am anti caking agent in cheese.

No, "powdered cellulose" used in food must meet the specifications of the Food Chemical Codex. The extraction process necessary to purify cellulose to those specifications removes all traces of protein from the material. In addition, commercially available powdered cellulose is not extracted from any gluten containing plants.
