"Normal" sugar is a) sucrose but b) not "normal" sucrose in that it's actually super-concentratedly fake (factories, industry, etc.)

"Normal sugar" can be digested by bacteria to produce lactic acid, which dissolves the calcium in your teeth and causes cavities. Furthermore, bacteria also use sucrose to stick to your teeth (so they can live longer).

Xylitol "sugar" is not really a sugar. It's a sugar alcohol, which means it contains -Oh at one of the carbon positions. In English, it's sweet "kind of like" sugar, but bacteria cannot digest it. This knocks out the two problems with sugar, but creates another one. Xylitol can be hard to digest, which means bloating, gas, etc. However, the more you take xylitol, the more accustomed your body becomes. The point is that xylitol is sweet, gives you energy (albeit much less than sugar), and it does not promote cavities.

Even better: research is starting to show that not only does it prevent cavities by starving bacteria, but it seems to ... "kill" bacteria in a sense by taking a more active role. I have no idea how it does that.

Bottom line: out of the all the sugars and the sugar alcohols in the world, concerning their effects on the human body (especially your teeth), xylitol is #1. The hardest part are the symptoms you get when you first try it out because again, bacteria hate that stuff, but the great thing about the human body is that it can acclimate. We are more complex than bacteria (probably because in our gut, is a multitude of bacteria, not just one type).

Some dentists agree xylitol is a miracle.

What are the Symptoms of xylitol poisoning?

As xylitol (tree sugar) ingestion may induce hypoglycemia in dogs (low blood sugar), the symptoms for hypoglycemia are the ones you'll look for, such as lack of coordination, seizures, vomiting, sudden drop in energy collapse, etc. Xylitol can do liver damage to dogs as well, and it doesn't appear to be related to the dose. Because of this you should immediately take the dog to a veterinarian if you think he's had any xylitol. The most common source of xylitol for a dog is sugar-free gum, but there are other sugar-free human foods that have xylitol in them.

What is the structure of xylitol?

Xylitol is a five-carbon sugar alcohol that is used as a sugar substitute. The organic formula is (CHOH)3(CH2OH)2. That's the structure. How about the benefits? The open nature of xylitol and its ability to form many different sugar-like structures appears to interfere with the ability of many bacteria to adhere. So Xylitol is often used to remedy colds and sinus irritation via nasal sprays/washes as well as promote dental health via Xylitol toothpaste and Gum. www.xlear.com is a leader in Xylitol-based products if you want to check them out.
