Yes. When a chemical change occurs, Atleast one of five changes MUST occur. These are: 1. Gas is Produced 2. Permanant colour change occurs 3. A solid is formed 4. Heat, light, sound or electricity is produced 5. Change in mass (weight) occurs So, when a cake bakes, Permanant colour chance occurs, AND The cake becomes lighter.

I am guessing that you are studying the 360 Edexcell science GCSE course but even if you not this is still relevant. Baking a cake is a chemical reaction. A chemical reaction is a reaction that takes place and you can't separate the product into the reactants again.

It is usually studied to show how the carbon dioxide is formed by the reaction of Sodium hydrogen carbonate with Tartaric acid to eventually form the bubbles of carbon dioxide that cause the cake to rise.

When rising agents are used various chemical changes produce gas

sodium hydrogen carbonate (bicarbonate) reacts with any acid in the mix to produce carbon dioxide

ammonium carbonate when heated forms ammonia and carbon dioxide, this is a leavening agent used commercially in the manufacurre of biscuits.

Another rising " effect2 is not chemical. Beating/mixing a cake creates air bubbles

The bublles of air, carbon dioxide or ammonia expand on heating the albumen in the egg solidifies and stops the bubble bursting- the gluten in the flour forms an elaxstic material thatexpands and at the end of the cooking cycle the cake "solidifies" in an expanded form (hopefully!)

The baking soda or baking powder in the cake reacts with the acid content of the ingredients to emit carbon dioxide which causes bubbles in the batter. These bubbles are then trapped as the cake bakes and cause the cake to rise.
