It takes almost exactly a gallon. Just did my oil change on a 2006 Kawasaki Vulcan Classic 900. It was just over a gallon, but a gallon worth was good enough.

In tool box there are two bolts. Unscrew those
3.2 quarts with filter and 3 quarts without filter.
The headlight is the only thing different on the Vulcan Classic. The Vulcan 2000 has a projector headlight with a larger housing.

Theres a sticker at the fill cap that says 3.0 liters w/ filter. I put 3.0 quarts w/ filter and its fine.
The standard plug for a 99 Vulcan classic is the NGK DPR5EA-9. The 9 stands for the preset 0.36 gap.
With engine oil filter change : 4.5 quarts for the 3.0 L - Vulcan - V6 engine 5.5 quarts for the 3.0 L - DOHC - Duratec - V6 engine according to the owners manual
