On your 95 Chevy tahoethe Temp gauge fluctuates from cold to hot. has new sensor and thermostat what else can cause this?

Can be normal if it happens at a traffic light and again once you get moving again. Might still have some air left in the cooling system. Sometimes tricky to get it all out. Just taking the cap off the tank and running it for sometime will help, often times just drive it with eventually get rid of the air.
Hopefully it's not a leaking head gasket!
