Oil pressure of 20 PSI at idle, 500 - 750 rpm, is well within specs for both a 5.7 & 6.o L gas engines.

The fuel pump pressure may vary by vehicle. However, on average the fuel pump pressure with the engine running should be between 4-6 psig.

This is probably a result of an improper running technique. You should change from heel to toe running to landing on the balls of your feet, this should relieve pressure on your heel.
