It is not about you "should" or "should not". You have full right to decide whether you want to date someone without feeling guilty.
However, it might be a good idea to go on at least a few dates with someone you do not find "incredibly attractive or have a crush on", if you think they have attractive qualities, such as kindness, intelligence, sense of humor, etc. You might be surprised at how your view of and feelings for this person change after getting to know him/her. Especially if it is a him, as women are more easily attracted by the inner qualities of a man, which gets revealed more through dates.
