Water hammer is caused by the pressure surge that occurs when water flow is suddenly stopped. This happens quite frequently from what is called "quick closing valves" i.e. refrigerator ice makers, dishwashers, washing machines, etc.. The best way to repair this problem is to install "hammer arrestors" on both your hot and cold water lines. There are several designs manufactured, for example at your washing machine they are made on valves that screw onto the existing valves at your washer box. Check with your local plumber or hardware store to see what is available in your area.
If you have access to your water lines under your house, they make straps or talons that are used to secure your water lines to your floor joists.
As for how much damage is it causing, normally if it is fixed there will be minimal damage to your system or fixtures. If it is not corrected, it could eventually "hammer" enough to break your water lines loose either at the joints or at the fixtures.

Most likely your water pressure is too high, and the water flow is causing water hammer on your pipes at the turns. To alleviate this, you can lower your water pressure, or install shock arresters at the problematic areas. Or, it's possible that your pipes are rubbing against metal hangers, causing the noise.
