There are two ways: the right way, and the way my grandfather did it. My grandfather's way was to buy 25 boxes of zinfandel grapes. He would break their skins on his washboard (that thing about stomping grapes is bull--Italian people never did that. We always used washboards or wine presses.) then put them in his wine barrel. After four days he would start tasting the wine. At some point it would be just perfect. He would then leave it a day to get even better. The next day, he would taste his wine and say, "Gee, I wish I would have bottled it before it turned into vinegar." My grandfather died 38 years ago, but I think we still have some of his vinegar in the family. He was very prolific. The right way? Cut the barrel in half and bury it in the ground. Build a little roof over it if you like.
