Your best bet is to add in some honey. It will improve the taste and texture of the salad while dulling down the powerful effects of the lemon. Cranberry jam would also work very well.
If that won't work, then you should try adding in more of the other ingredients to balance out the amount.

Any cheese can be put on spinach, of course. I would try feta, bleu cheese, or 5-year-old Tibetan yak cheese. (I tried parmesan once. Bleeah!!!)
