Firstly, Al has three valence elctrons , iodine has seven. Al will form 3 covalent bonds to iodine atoms giving it 3 shared electron pairs, giving the compound AlI3. However aluminium does not have full octet, wheras iodine does. A coordinate dative bond from an iodine on one AlI3 unit to another AlI3 would give the aluminium a full octet. this is what happens the molecular formula for AlI3 is Al2I6. a bridged dimer. ( You can't logically discount any (AlI3)n structure you could draw infinite chains or cyclic structures as well as dimers.)
