That would not be a good idea. The flavor and consistency would be VERY different is you used maple syrup instead of vanilla.
You could if you wanted, but keep in mind that the cookies won't taste the same at all. The vanilla adds a hint to it that other things cant really add, and you can replace it, unless you have vanilla cream or something. Of course, you could try a bit of caramel or cinnamon; sometimes that helps. So, try it!!

This is more of a matter of taste I'd say, however, I'd suggest using Mint Extract in place of the normal vanilla. Vanilla extract is called for in most chocolate cake recipes, it enhances the chocolate flavoring, to make a mint cake, just substitute a mint extract for the vanilla.

Eat the dough raw!! LOL (only if the eggs are pasteurized). Heat + chocolate = melting. Use actual chocolate chips instead of chunks of chocolate. They will melt, but firm up as the cookie cools.
