Why do chocolate chips sink to the bottom of cake mix?

The Chocolate Chips are heavy so they just sink to the bottom the same way we can drown in water if we can't swim. If you use mini-chocolate chips, wet them with water, milk or extract and then coat them with a light dusting of flour, they won't sink to the bottom of the cake mix.

The best way would be to drop a few chocolate chips into a graduated cylinder filled halfway with water. Be sure to note the volume before and after adding the chips. The volume will be equal to the difference in volume divided by the number of chips added. Note: do not melt the chocolate chips because the volume will change with temperature and type of fat crystal structure.

If your chocolate chip cookies are getting a bit hard after they cool, just place them in a tupperware container with a slice of bread. The cookies will soften by drawing the moisture out of the bread. It's not a recipe, but I use it everytime I make cookies and it works like a dream! Enjoy your soft cookies!! also... if your cookie recipe doesn't have sweetened condensed milk or just normal condensed milk, try adding some into the recipe, it makes them really nice and moist too. (plus you get to eat the leftover milk... yum) that bread idea is interesting too, I'll have to try that. also if you buy a packet of chocolate chips it will often have a chocolate chip recipe on the back that you can looks at and theyre pretty good recipes!!

just chop/grind squares into small bits... then measure... or use a displacement method... 2 cups chips with air pockets/spaces between probably about 1 1/2 cups solid chocolate when melted. take a full glass of water, pour out 1 1/2 cups, then add chocolate squares till water fills glass to top...

What is the manufacturing process for chocolate chip cookies?

Chocolate chip cookies are manufactured very similarly, but in a larger scale, as you would make them in your kitchen. First, all the ingredients are fed into a large batch tank. Instead of eggs and milk, dry egg powder and dry milk are most likely used. After everything is well-mixed, the dough is transferred to a machine with two feed rollers. The feed rollers turn to pull the dough into the machine and push it out through several openings of the proper shape/size (in this case likely a 2 inch diameter circle). As the product is going through the opening, a wire comes across and slices the cookie pieces off so that they land on a tray. The trays are then transferred to a large oven and baked in batches. Alternatively, the cookie pieces might transfer onto metal trays and travel through an oven continuously. After a cooling stage, the cookies are packaged, cartoned, cased and distributed.
