During the 20th century, Egypt fought in the 1967 (Six Day War) against Israel (and was embarrassingly defeated); Egypt regained it's lost honor when in 1973 (Yom Kipper War-which also started America's first "real" gasoline crisis-prices went from 29 cents a gallon to $1.00 a gallon OVER-NITE) Egypt successfully attacked Israel again, this time armed with the relatively new Sagger wire guided anti-tank missile (which successfully made it's debut in Vietnam in 1972 against M48 Patton tanks).
Israel was COMPLETELY taken off guard and suffered greatly. The US had to quickly send over M60 Combat Tanks (MBT-Main Battle tanks) and a batch of F4 Phantoms to replace Israel's losses. After about 3 months of fighting, Israel finally gained the upper hand and the Egyptians withdrew back into their territory. But the Egyptians fought a lot better this time than they did in the Six Day War; the whole world was surprised at the Egyptian's success on the battlefield...and Israel learned a valuable lesson (an old lesson); never underestimate the enemy.

In fact, they did go to war. They had to battle many different peoples (such as the Hittites, Persians, and Sea Peoples) for various reasons. The Egyptians had a strong military that it needed to defend itself against these forces.
As a matter of fact, Egypt was fighting major wars long before the Roman Empire ever existed. Later Egypt belonged to the Romans, then the Turks, then the British. In the two most major wars in history (World War 1 and World War 2) Egypt was reduced to being merely a satellite nation of Great Britain, and its military participation was most limited. After severing its ties with Great Britain, Egypt maintained good relations with both sides during the Cold War but fought several wars of significant magnitude with Israel, including the Six Day War (1967) and the Yom Kippur War (1973) before the two nations eventually made peace. Egypt's most recent major war was the Persian Gulf War (1990-91) in which Egypt was part of the Gulf Coalition against Iraq.

I don't think they ever fought three wars against each other. The only Rome/Egypt war I can recall is Caesar's Alexandrian War. Egypt was very willing to compromise with Rome because they knew that Rome could step in and conquer them if they chose. Are you sure you are not thinking of the Punic wars between Rome and Carthage?
