The early Muslim rulers in India were fiercely intolerant of a faith that they saw as idolatory, destroying temples and forcing believers to convert.
During the time of Akbar, this was changing. He was respectful of all faiths, became a vegetarian so as not to offend the Hindus and built Hindu temples. In 1575, he built a 'house of worship' where scholars of all religions could meet for discussion.
They realized there were too many Hindus to convert them all.
Muslim rulers were never tolerant to Hindus. Most of them are famous for their Temple destruction activity. They have written their "Idol Breaking" activity with pride in their chronicles. All of them imposed "Jizya Tax" on Hindus. The Hindu Officials were often charged with false charges and forced to convert to Islam. Great-grandfather of Mohammad Iqbal, Pakistani poet was also converted to Islam in the same way. If the question is asking why Muslim Rulers did not forcibly convert Hindus when Hindus are clearly polytheists, the answer is that there were just too many Hindus and too many of them were in remote regions.
The Mughal rulers were different from earlier Muslim rulers of India because most of the people who ruled were Hindu's. Eventually a ruler Akbar persuaded Hindus an Muslims to live more peacefully together. ~I hope that helped you!:)

Since India has large populations of both Muslims and Hindus, maintaining good relations between these communities is necessary for effective governance.
