today in Mexico the most appreciated dishes are made with pork (tacos al pastor, asado de boda, and tamalesetc.). very few mexican dishes are totally autoctonus, most of them are adaptations from foreign tastes, like tacos they came from the Middle East (adaptation of kebab), and spicy pastes like mole, made of savory fruits, nuts and seeds were not unknown to Europe and the middle east in ancient times. these are just a few examples also chiles rellenos(stuffed peppers are well known in napoles, theres even a recipe from the nona in YouTube).

regarding your question, its very interesting that at some point i made myself the same question, you see, the aztecs had no pork before the conquest and they had few sources of protein (besides human flesh) and if tamales were filled with flesh as they are today then... it would make sense this quote " And these [persons] distributed among their friends and families that [flesh] and these [persons] which they had given [to the god as a human victim]. They say it tasted like pork meat tastes now. And for this reason pork is very desirable among them."

could it be that many dishes which were prepared with human flesh are prepared now with the closest substitute, pork? well i havent come yet to a modern source which openly states such but it is certainly possible
