I would assume they are called cocks, as in aquaculture a female fish is refered to as a hen.
Actually a male fish is call a Buck.. Female=Hen.. This does not follow normal nomenclature. IE: Buck/Doe Cock/ Hen
To my knowledge there is not a specialty name for a male Clown fish.
