The biggest and I hope most obvious is not to use regular coffee grounds in place of instant coffee crystals. That being said you can brew a very strong pot of coffee and use 1/2 cup for every 1 tsp of instant the recipe calls for. Reduce the amount of liquids in the rest of the recipe.

Read the label. It will tell you how long it will last. However, you can keep an unopened jar of jam for years and it will still be good.
Raccoons are pretty creative. Keep a lid on the jar (with holes in it for air) and keep the jar itself in a tight-fitting box, so that the raccoon can't get to the jar to break it. Nail the box to a table so they can't move the box. That ought to get it.
