Yes, if the liver is putrid it could poison an animal. Also the livers of some animals (eg that of a polar bear) contain so much vitamin A that if a human ate it (humans are animals) they would get vitamin A poisoning.

EWWW why would you want to now that's just nasty and probably very gross. Deer heart and liver taste very similar to beef/pork/lamb, or any other large animal heart and liver. the younger the animal, the more mild and tender they are, but deer liver and onions cooked in bacon grease is delicious. and stuffed deer heart is very good.
