Well, girls are each different. A lot of girls, if they are more sociable and care about their looks, you can say that she is interesting because she's so pretty and cool.
If the girl is sociable but is more casual about herself, shes like go with the flow, then you can say that she is interesting because she is unique in the sense that she is very cool and low stress.
If the girl is very smart but not sociable then you can say she is very intelligent and quiet but she does know how to have fun.
The girl and her personality matter on what you say to her.
Another good point, the answer is dependent on whether you said she was interesting and she's asking you why you think so (go with the above) or you never said that and she's fishing for compliments. If the latter is the case, turn the question back to her. Ask her for her feelings on the matter, why people do find her interesting, let her tell you about herself.
