Many are spread through improper hand washing by employees who process, cook, or serve these foods. Most common in US according to CDC, are infections such as camppylobacterosis (caused by campylobacteria), Escherichia coli, salmonellosis (from salmonella such as in raw or undercooked eggs), and listeriosis (from listeria monocytogenes). Most of these infections can be avoided by following the US government guidelines for safe processing, transporting, cooking, and serving foods, as well as proper hand washing. Some of these bacteria have developed antibiotic resistant strains (due partially to overuse of antibiotics in animal feed and improper use of antibiotics by humans) and are difficult to treat.
