Customs can cover anything from costumes and patron saints to such practical angles as styles of chapels, musical repertoire and burial customs. it is not practical to generalize. The costume is usually referred to as the Habit. Types and styles vary with the orders involved. There are different styles of crosses, other religious articles, and as one might guess a sort of organizational personality- not too different from the (styles) of various colleges and universities. hence the Dominican order ( named after Saint Dominic) publishes a magazine called ( it's Dominican) There are different slogans and mottos also- again showing an organization structure akin to colleges and/9or the armed forces ( Insignia, uniforms ( called habits). Some orders have different structures of vows- such as a fourth vow to community service- care of the dying, or whatever the special apostolate is. Most Nuns only have three vows.
Nuns wear different things depending on the customs of their particular community. I am a teacher and it would be quite inappropriate for me to show up to school with no shoes on, with high-heeled shoes, or expensive shoes. Some nuns are dedicated to works of penance or have a special spirit of simplicity etc. It would be appropriate and virtuous for them to not wear shoes if that is their communities tradition.
