Operations is the process of creating what it is your business sells. So for Burger King, it's how you create the burgers, fries, chicken nuggets, etc. that accounts for your revenues, for Merry Maids, it would be how the maids actually go about cleaning one's house.

An operations concept is the way you go about creating those products. For instance, Burger King has chosen a centralized kitchen method, whereas some Chinese food places choose to serve food buffet style, and some burgers are ready made and sold in vending machines.

Just-in-time operations is a method of operations that allows producers to keep very low in-house inventory levels of raw materials by ensuring that the parts used for today's production (burger patties, lettuce, tomatoes, fries, buns, chicken nuggets, etc.) arrive first thing in the morning (or several times a day) and are nearly ALL consumed during that day's production so there is nothing left over that needs to be stored until tomorrow. Tomorrow's deliveries will arrive tomorrow for the number of units that need to be produced tomorrow. This way you need very little space allocated to storage of raw materials or finished goods, but it requires tremendous skill at forecasting production requirements and coordinating deliveries.
