This is more of a matter of taste I'd say, however, I'd suggest using Mint Extract in place of the normal vanilla. Vanilla extract is called for in most chocolate cake recipes, it enhances the chocolate flavoring, to make a mint cake, just substitute a mint extract for the vanilla.
There are five recipes that can be made using vanilla abstract. Some of the names of the recipes are almond coconut cake, apple cake, and banana cake.
The taste isn't AS rich, especially if you are making white cake.

You don't necessarily NEED vanilla extract in cookies, but it vanilla extract does add flavor to the recipe. I have accidentally left it out of a cookie recipe before, and you can definitely tell the difference. Without the vanilla extract, the cookies taste very bland.
If you omit vanilla extract, you will not have the intended flavoring. If you don't like vanilla, try substituting maple syrup, exactly equal to the amount of extract the recipe states.

Strawberry shortcake! You can make whipped cream and fold in strawberries then dollop the vanilla cake with that also,. Have fun strawberries and cake were made for each other ! Yum!
